Toast vs Shokupan: What's the Difference?

At first glance, toast and shokupan can seem almost identical - soft loaves, golden crust, and white interiors. But just by taking a bite, the differences become clear. Both are sandwich loaves commonly found in Asian bakeries, but they're crafted with slightly different goals in mind.

What many of us know as everyday "toast bread", the kind commonly found at neighbourhood bakeries, is typically an enriched white loaf designed for convenience and versatility. It's soft and fluffy, slightly sweet, affordable, and everyday-friendly. A familiar and dependable loaf many households keep on hand for a quick breakfast or snack.

Shokupan, often called Japanese milk bread, takes soft bread a step further. While it uses similar enriched ingredients, the focus is on achieving an exceptionally fine, pillowy texture and a more pronounced milky aroma. It is designed to have an ultra-soft pull, tight, even crumb, and more premium mouthfeel.

If toast is a familiar comfort, shokupan is softness dialled all the way up.
