Naturally leavened with our own sourdough starter and hand-laminated with 84% European butter over three days — folded and rested between each turn, then hand-shaped before baking at high heat. The result is shattering layers, a deeply caramelised crust, and a honeyed, butter-rich interior with a depth of flavour that only comes from time well spent.
